Your favourite comfort food, reimagined with the goodness of millets and a South Indian twist.
Presenting you with a dish that is loaded with colourful veggies and aromatic spices, and made with millets, proving healthy can be utterly delicious.
Recipe Ingredients:
- 1 cup Millet Amma’s grains cooked as per pack instructions (use any grain of your choice)
- 1/2 cup mixed vegetables (carrots, beans, peas)
- 1/4 cup diced potatoes
- 1 onion, finely chopped
- 2 green chilies, slit
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 2 tbsp oil
- Salt to taste
- 2 tbsp coriander leaves, chopped
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add cumin seeds, curry leaves, and green chilies. Sauté for a minute.
- Add onions and cook until translucent. Add salt to taste as you go.
- Add potatoes and cook for 5 minutes.
- Add other vegetables and cook until tender.
- Mix in the cooked millet and salt. Stir well.
- Cook for another 5 minutes, stirring occasionally.
- Garnish with fresh coriander leaves.
Pro tip: Add a squeeze of lemon for an extra zing!
